Mother's Day Brunch!

Gluten free Millet Waffles With Ricotta, Farm Eggs, and Chilly Jam.


Gluten-free Waffles Recipe:

Makes 4 Waffles 

1/3+1/4 Cup (80gr)  Millet Flour

1/3 Cup + 2 TBSP (80gr) Sweet Rice Flour

1/3 Cup + 3 TBSP (?gr) Tapioca Starch

1 TSP Baking Powder

1 TSP Baking Soda

1 TBSP Sugar (15 gr)

2 Large Eggs (110gr) 

? Cups 180 gr Milk 

1/2 Tsp (3gr) Melted Butter (plus extra melted butter to brush the hot iron)

What you'll need:

Bowl, wisk, Waffle maker, brush, scoop.

Directions:

Wisk all dry ingredient in a bowl, in another larger bowl wisk, eggs, milk and melted butter together, add dry and wisk until smooth. Let the batter sit for 10-15 min, just so our gluten-free flours have time to hydrate.

Add:

Fried eggs

Creamy ricotta

Top with Jam Stagg Chilly Jam for a spicy sweet kick!

Add some greens of sort.

Serve immediately as the waffles will loose their crispiness.
