This gluten-free carrot cake consists of three layers of moist, earthy, nutty and spiced cake, we carefully fold in the batter the right balance of freshly grated carrots, chopped walnuts, Vietnamese cinnamon and unsweetened coconut flakes.
Each cake then is soaked with a pineapple zabaglione (non-alcoholic), and layered in between a tangy cream-cheese Italian buttercream - our lighter and less sweet version of the traditional cream-cheese frosting.
Finish touch, a white dusting of unsweetened coconut flakes topping.
This 6'' Cake serves 8 -10 people.
